Ingredients:
Olive Oil
Coconut Oil
Red Onion
Carrot
Garlic
Ginger
Chilli
Fresh Coriander
Coriander Seeds
Mushrooms
Cocktail tomatoes
Coconut Cream
Fresh Lemon juice
Method:
Sweat in pot until the onion is translucent
2 x TBL Olive oil
2 x TBL Coconut Oil
1 x Grated Red Onion
1 x Grated large carrot
Grind below ingredients together in mortar and pestel & to the pot
Small garlic clove
Small chuck of ginger (same as garlic)
Small chilli
Small handful of coriander stems
1 x TBL coriander seeds
After about 3 mins add 2 x medium brown mushrooms and 6 x small cocktail tomatoes along with a little hot water and cook for 40 mins
Add 1 x Can coconut cream and further cook until reduced (about another 45 mins)
Squeeze of lemon juice to taste
