Ingredients & Method:
Step 1:
In a bowl mix together.
8 xTBL Spoons of Olive oil
8 x TBL spoons of Coconut oil
1 x Fresh chilli chopped finely
2 x Cloves of garlic chopped finely
A small knob of ginger chopped finely (optional)
Half a handful of fresh basil chopped finely
A sprinkling of dried aromatic herbs (mixed herbs or Italian herbs)
Salt and black pepper to taste.
Step 2:
Wash and cut 2 large brinjals into 1/2 centimetre thick circles. Salt both sides of the brinjal generously and place on a plate for 15mins. During this time you will see the moisture being extracted from the brinjal.
Step 3:
Pat the brinjals dry using a hand or paper towel. Dry fry them in a non stick pan until golden brown then flip and do the same to the other side.
Step 4: Remove from the pan. Place each brinjal circle into the oil mixture you made in step 1. Make sure that you coat them well. Remove and place them on a plate and continue with all the pieces. Pour the remaining oil over the Brinjals on the plate and leave them to stand and soak in the flavour for at least 10mins.
Now they are ready to enjoy.
I serve this with a sweet potato mash made with butter, honey, and cinnamon.
