Ingredients for Salad:
Free Range Eggs
Baby Spinach Leaves
Baby Beetroot Leaves
Fresh Coriander
Fresh Rocket
Fresh Lemon
Seed Mix
Himalayan Salt
Ground Black Pepper
Method For Salad:
Boil one or two Free Range Eggs to your liking.
Toss together some Baby Spinach, Baby Beetroot leaves, Fresh Coriander and Fresh Rocket on a side plate. Sprinkle with seed mix. Top with the egg. Season with Himalayan Salt and some ground Black Pepper. Finish off with a small squeeze of Fresh Lemon juice.
One would not think that lemon juice goes with egg but a small squeeze really brings out the freshness and is really healthy to boot.
Seed Mix: I like to make up my own mix at the beginning of each month and store a jar in the fridge. This way it’s easy to just grab the jar an sprinkle some on whatever meal I’m making if the need arises. Seeds are packed full of micro minerals and essential fatty acids. I try to include them in at least one meal per day.

Carrots
Apple
Fresh Ginger
Fresh Turmeric
Fresh Basil
Fresh Lavender
Fresh Rosemary
Fresh Oregano
Method For Veggie Juice:
For this you will require a Juicer. I love my Oscar Juice extractor which was generously given to me by a close friend of mine. Below is an article detailing the difference between the various types of juice extractors should you be interested.
I change up my juice every few days but a staple is Carrot, Apple, Ginger and Turmeric.
I use about 5 Medium Carrots and one Apple. Along with one small Knob of Ginger and another of Turmeric (Easily found in any good Fruit & Veg Shop nowadays) I also add whatever herbs I fancy that day from my garden.
The ratio of Carrot and Apple can be adapted to your taste. However try to keep the fruit portion as small as possible as it still contains (although natural) some sugars which we do not want too much of. Start out with small amounts of herbs just a small sprig and try to work your way up to more as you get used to the taste. I believe herbs to be natures medicines and eat them in every meal I can possibly cram them into.
