Broccoli and Red Onion Pasta

Ingredients:
Pasta (Any you like) I used thin spaghetti. Gluten free if preffered I like normal pasta though and just limit how often I eat it.
Coconut Oil
Brocolli
Red Onion
Double Cream Plain Yoghurt (can be substituted with any plain unsweetened yoghurt)
Red Chillies
Pink Himalayan Crystal Salt
Fresh Lemon Juice

Method:

Cook the pasta as per the instructions on the packet.
While the pasta is cooking chop up the Brocolli into small to medium florets and cut the onion into thin rings.
Add about 1 TBL of Coconut Oil to a frying pan and Steam fry for approximately 4 mins until just cooked. (Steam frying is a the techunique of flash frying the ingredients really fast “in this case approximately one – two mins” and then adding a little water to finish off the cooking. This way the veg is not over cooked nor does it loosse too many of its nutrients.

Plate the paste, top with the Brocolli and Oinion mix. Add a dollop of Double Cream Plain Yoghurt. Sprinkle with a little Himalayan salt and some finely chopped Red Chilli. Finish off with a small squeeze of Lemon Juice.

Double cream plain yoghurt: Although plain yoghurt has many benefits. Too much dairy in the diet is not good for us. Dairy is not for everyone and now days so many of us have intolerances. I myself find that a lot of dairy certainly surpresses my immune system. When I do use dairy I limit it to very small helpings. I eat almost no other dairy other than plain yoghurt and occasionally a little white cheese and hence I find that I oftn use the yoghurt to add the creamy texture to many of my dishes.

Steam Frying: This is a great way to get the taste of frying without destorying all the nutrients in a given food. Frying is never ideal but steam frying is way healthier than conventional deep frying. I usually fry my foods for about one or two mins and then add water to finish of the cooking process.
