Ingredients:
Red Onion
Garlic
Fresh Oregano
Fresh Mint
Olive Oil
Coconut Oil
Frozen Peas
Coconut Cream
Mushrooms
Feta Cheese
Method:
Blend 1 small red onion , clove of garlic, few sprigs fresh oregano together. Saute these in a pot with some olive oil and coconut oil until translucent.
Add 500grams peas a small amount of water (just enough to cover the peas), a few sprigs of mint and cook until peas are tender.
Add 180 ml Coconut cream to pot.
Allow to cool and blend the mixture in a blender until smooth adding water to desired consistency.
Garnish with Crumbled feta and sauted mushrooms.
