Rasberry Sorbet

Ingredients:

¼ cup of Honey
¾ cup Water
2 cups Fresh Rasberries (or frozen work well too)
2 TBLS Fresh Lemon Juice

Method:

Stir Honey and water over a low heat until combined.
Bring to the boil then remove from the heat and allow to cool.
Place the fruit and lemon juice into a blender and puree. Add the simple sugar mixture (water and honey) to the blended fruit and blend further until thoroughly combined. Scrape the contents of the blender into a thin tray or plastic container (where the contents can easily be removed once it has frozen) Wax paper can be used but I find it sticks to the mixture. Freeze until solid. Remove from the tray, break into chunks and puree once again. Place in the freezer again in small containers that can be directly eaten from.
