Tofu Scramble

Ingredients:

1 x Block of Tofu
1 x small red onion
1 x clove of garlic
½ Lemon juice
Hand full of Fresh coriander
Hand full of oyster mushrooms
1 tsp Ground Cumin
1 tsp Turmeric
1 tsp Paprika
1 x Fresh Chilli
Small Avo
Coconut oil
Olive oil.

Method:

Chop and fry the onion in a table spoon of coconut oil until translucent.
Add the Turmeric, paprika and cumin and fry for a min or two.
Add the Garlic
Add the Oyster Mushrooms
Add the Tofu chopped into cubes or crumbled.
Serve with Fresh coriander, fresh lemon juice, chopped chilli and avo on the side.
