Chickpea Tomato Salad

Ingredients:
Wild Rocket
Beet Root Leaves
Chick peas
Baby tomatoes
Pepperdews
Feta Cheese
Olive oil
Lemon Juice
Pink Himalayan salt
Black Pepper
Avo (Optional)

Method:

Take a hand full of Beetroot Leaves along with a handful of Wild Rocket and tear roughly into a bowl. Mix in half a tin of heated Chick peas (heat the chick peas in a little water in a pot just until the water begins to boil) Add about 5 baby tomatoes cut in halves. A few blocks of feta cheese and some sliced pepperdews. Toss together lightly. Season with a squeeze of lemon juice, olive oil, some pink himalayan salt and black pepper.

Adding avo is a lovely alternative.
